So, the March 2011 issue of Clean Eating magazine arrived a couple weeks ago, and it's packed with tons of yummy-looking recipes! I decided to start with something different and make a breakfast, so I chose the Ricotta and Spinach Frittata.
I haven't cooked a breakfast on the weekend in a very long time, usually because so many recipes I find are complicated and I've never been very successful cooking eggs. However, this recipe was super easy and it turned out great! I just added some fresh fruit and coffee and it was a perfect Sunday brunch!
