I haven't been out to see the garden for a couple of weeks - life has been crazy busy - so I was happy to be able to see the last few plants are still going strong!
We still have a ton of red and green bell peppers, although a few of them are getting cooked in this heat! Yes, it's still in the 90s here even though it's almost October! Very annoying!
I can't decide if I want to stuff these beautiful red peppers or roast them.
The Japanese eggplant is still producing some small eggplants as well. I know I planned to make eggplant parmesean, but I haven't done it yet. I guess I still have a chance!
